Our minhag is to refrain from eating any roasted meat (including poultry) on Seder night. This includes pot roast. If you put water or other liquid in the pot with the meat, then it is muttar. (ShA1,2 — MB1)
Do not overeat or overdrink. If you do not have any appetite for the Afikoman, you will not be fulfilling it in the best way. (Rama1 — MB6)
A person is obligated to be involved in the study of the Laws of Pesach all night long. (MB7)
The roasted egg on the Seder plate represents the Korban Chagiga. It is good to eat it (on both nights) like the Chagiga was eaten. Besides this, other eggs are eaten for availus on the Churban. (Rama2 — MB11,13)
There is a minhag not to dip more than the two dippings at the Seder. (Rama2)
